Yesterday I made a delicious strawberry iced lemonade, but my tree is overflowing with lemons and I need your help to come up with new recipe ideas.

Beef Nacho Casserole

The following is a guest post from my good friend Lynn. I have never made a recipe of hers that my family did not love!

I love to cook and bake and I love to spend all day in the kitchen, but the reality is that I do not usually have time to do that. On a day to day basis I need quick and easy recipes that contain everyday ingredients. I need meals that I can get on the table without much work or time.

This recipe is just that. It is quick and easy and it uses ingredients that I usually have in my kitchen.

This recipe is also a great way to use up those leftover tortilla chip crumbs that are all crushed or stale at the bottom of the bag. Does anyone else have a bag of chips in their pantry that looks like that? I hope I am not the only one that has that problem.

I have a similar version of this that I make with Doritos and Chicken that my kids also love, but I think I like this beef version a little better. However, both of them are favorites in our family.

Beef Nacho Casserole

Ingredients

  • 1 lb of ground beef
  • 1- 14 ounce can of diced tomatoes
  • 1- 10 ounce can of corn drained
  • ¾ cup sour cream
  • 1 teaspoon of chili powder ( you can also use 1-2 tablespoons taco seasoning instead of the chili powder)
  • 1 ½ cups of crushed tortilla chips
  • 2 cups shredded cheddar or colby jack cheese

(you could also easily add beans to this also)

Cook beef until browned and crumbled. Drain grease and stir in tomatoes, corn, sour cream, and chili powder. Set aside.

In a 9x 13 or similar size pan, spread the crushed chips, then layer ½ of  the beef mixture,  then ½  cheese, then remaining beef and cheese.

Bake at 350 for 20-25 minutes or until heated through.

Serve and enjoy!

Bean Burritos

I made this dish as part of my use up all food in the house menu plan. I have to say it was a huge hit! After eating it, I told my husband I didn’t even think we could go out for Mexican again! This meal was so delicious and so cheap!

Easy Bean Burritos

  • Homemade or Canned Refried Beans
  • Shredded Cheese ( used a combination of colby jack and asiago, I really think the asiago made all the difference)
  • Diced onions
  • Salsa
  • Enchilada Sauce
  • Tortillas

Spread beans on a tortilla. Add diced onions.

Bean Burritos

Add salsa and enchilada sauce.

Sprinkle Cheese.

Roll up and place in a greased pan.

Pour remaining enchilada sauce on the top of the burritos and sprinkle with cheese. Or, if you are me, cover with cheese.

Bake at 350 degrees for 25 minutes.

Serve.

You’ll never go out for Mexican again!

Sweet Cornbread (Whole Wheat)

I know there is a great debate over whether cornbread should be sweet or not sweet. I fall into the sweet cornbread group, so if you’re with me you are going to love this whole wheat version. Use this recipe for muffins for an easy Thanksgiving side or any fall potluck.

Sweet Whole Wheat Cornbread

  • 1 cup sifted whole wheat flour
  • 1 cup yellow cornmeal
  • 2/3 cup white sugar
  • 1 teaspoon salt
  • 1 Tablespoon baking powder
  • 1 egg
  • 1 cup milk
  • 1/3 cup canola oil

Mix together whole wheat flour, cornmeal, sugar, salt and baking powder. Add egg, milk, and oil. Mix together until the dry ingredients are “wet.” Scoop into muffin greased cups or pour into greased loaf pan. Bake at 350 degrees. Muffins bake for 20 minutes, bread bakes for about 45 minutes. Cornbread is done when the top is golden yellow.
