Bagels

I have started baking bagels for our family. It is pretty easy and much cheaper than buying them from the store. The problem I have is that the egg wash burns the outside of the bagels every time. Last night I made a few without the egg wash and they didn’t burn. Any suggestions on how to keep the egg wash from burning?
Also, for those who make their own, do you flip them during baking?

I don’t know if this will be helpful or not, as I have not made bagels before. However, I have made pretzels that follow the same process (boil, brush, and bake), and I found that if I didn’t put enough water in with the egg it burned. I needed to use at least one Tablespoon per egg for it to work for me. If you are already using at least that much, than I guess I am no help to you, sorry!

I don’t think I’ve made them with egg wash before… Guess that tells you that it’s been a few months since I’ve made them! I do remember turning them once while they’re baking… Have a great day!

I don’t usually use the egg wash and they come out fine. If I do use the egg wash, I agree with watering it down-I also only use the egg white. Sometimes I just use a little water or milk, just enough to hold on the toppings. I’ve never turned mine either, wouldn’t the topping fall off?

Thanks for stopping by my site. I’m glad to hear from people who love the Vita-mix as it’s a hefty investment. But my daughter is a smoothie fanatic and this will be great!

I skip the egg wash. Eggs are just to expensive right now. I don’t think it adds flavor but does make them look prettier.
I do flip my bagels half way through.

I haven’t mastered bagels yet…but I make some buns that have an egg wash= 1 egg white and 1 tablespoon of milk and it never burns….you could also try ‘washing’ it during the last 10-15 minutes of baking.

We love bagels and there aren’t many bagel places
near by where I live now.
I am not a great baker!!

unless it takes like a new york city bagel, it’s hard for me to justify making one. and, for bagel enthusiasts/snobs, I really can’t justify getting bagels at a “store” or even a “bakery” for that matter. it has to be from a “bagel shop,” generally one that is small and slightly musty. and, for anyone reading this, regardless of where you stand on the bagel issue, what is your favorite bagel topping?? and how do you like to eat your bagel? sandwhich style or open sandwhich style?

Sometimes I skip the egg, if I’m making plain bagels… for ones with seeds on top, the egg helps them stick!
I haven’t been flipping my bagels on the baking sheet, either… they turn out fine!
