Honestly, I think everyone is going to stop reading my weekly menu plan because lately I have been no good at sticking with it!

Monday morning I had planned to make pancakes but Cora woke up sick and I was able to get an appointment first thing in the morning. The kids ended up with cereal as I had no time to make the pancakes. By lunchtime I wasn’t feeling well, so I put out a bunch of food and the kids made their own lunch. I ended up laying down as I could feel a headache coming on and woke up in time to make dinner. Since my turkey was still frozen solid, we had pink pasta, green beans, and apple slices. I made dinner, but still felt pretty crummy so I headed back upstairs without eating.

Tuesday morning I made our new favorite whole wheat pancakes. My kids skip the syrup if I add chocolate chips.

After breakfast I started the BBQ pork roast in the crock pot.

It was a beautiful day, so I sent the kids outside to play after they finished school. My kids love eating lunch outside, so they were thrilled when I brought out plates of peanut butter crackers, cream cheese crackers, cheese slices, popcorn, and rice cakes. It wasn’t until after lunch I realized I forgot to slice any fruit!

For dinner we had BBQ pork roast, southwestern potato salad, steamed broccoli, and corn. It was so good. At about 3:45 pm I realized I forgot to make the rolls, but the dinner was still delicious. All my kids love the pork BBQ, and we have a little leftover for lunch. I’ll post the recipe later this week.

I am so excited about the rest of my week. On Thursday, I will be hosting four of my favorite bloggers as we have a little pow-wow at the Happy House! I can’t wait to share the details.

wow i can’t believe your turkey is STILL frozen!! that is crazy. have you tried letting it soak in cool water in your sink all day? that is what i do and mine is usually thawed by night.

Ok, seriously? It’s still frozen? Well, I need to dethaw mine so I better start now to plan for next week. Talk about derallying plans…my guys went outside to put things in our fridge/freezer and it had been upplugged. 2/3 of it was dethawed. 10:30 at night was NOT the news I wanted to find out…UGH. So, I threw all these amazing cuts of meat in the crock pot at 11pm last night. Pork and beef together. I didn’t even care. I just wanted to get it cooking. We’ll see how they taste. It may call for some serious concoctions.

I love to put half of a beef roast and half of a pork tenderloin in the crockpot together. Give it some salt, pepper, onion powder & garlic powder, and it turns out sooo good! Just serve with whatever starch & veggies you like.

I love reading your blog. When your plans get derailed it shows me that you are willing to share no matter what happens and I think that’s great. One of the reasons I love this blog is because it shows how normal your family is. I really enjoy reading it.

We all have those days when Plan D (rather than A, B or C) gets on the table for dinner particularly when things get forgotten. We all forget ingredients. I made taco salad last week and when we were finished everyone loved it but said it would have been even better with refried beans (which were in the pantry!). :)

One time I made Hamburger Helper (I know, I know! It gets worse!) and actually forgot the hanburger! LOL! Everyone was a great sport about it(even the visiting neighbor child) but I don’t think I’ll ever live that one down!

That pork roast looks delicious, I have pork loins marinating in the fridge. I’m so glad ya’ll had some good weather so the little ones could get outside. Praying for a speedy recovery for Cora poor baby.

I always defrost my turkey in the kitchen sink in cool water. It thaws pretty quickly that way.

I have to chime in on the frozen turkey. I pulled mine out of our freezer on Monday morning (EARLY – like 6 a.m.) and 72 hours in the fridge haven’t even softened it. I’m worried that it won’t be thawed for Saturday! No big plans for it; just us and lots of leftovers for freezer cooking . . . but working during the week kinda limits the days when I have time to bake a turkey.

Can I just say I love this post? Not because it shows what you ate…but because it shows you are human and you forget things too! Whew! I was beginning to think I’d never get the hang of this whole housewife thing ;)
